Pumpkin is such a versatile veggie to cook with. This oven-baked pumpkin fritters recipe is proof of that. We all know the traditionally deep-fried fritters. However, this oven-baked pumpkin fritters recipe is perhaps less guilty. It omits all the oil that traditionally goes with this tasty bite.
This oven-baked treat is sweet and tasty. After coming out of the oven, top it with a mouth-watering sauce and a generous sprinkle of cinnamon sugar.

Oven-baked pumpkin fritters recipe

125 g soft butter/margarine
200 ml sugar
1 cup (250 ml) cake flour
15 ml baking powder
2 ml salt
3 cups (750 ml) cooked finely mashed pumpkin
5 ml vanilla essence
1 cup (250 ml) water
1 cup (250 ml) sugar
pinch of salt
1 heaped tablespoon maizena
½ cup (125 ml) lemon juice
Pumpkin frittersPreheat the oven to 180°C. Beat the butter, eggs and sugar well.Sift the flour, salt and baking powder and add to the egg mixture and mix well. Add the cooked pumpkin and vanilla and mix until well blended. Pour into greased muffin pans. Bake until golden and cooked through. Leave to set and cool. SauceCombine the sauce ingredients. Cook and stir over medium heat until the sauce thickens. Drizzle spoonfuls of the sauce over the baked pumpkin cakes. Sprinkle with cinnamon-sugar.
