Need a comforting side dish? Try this classic South African green beans and mashed potato recipe. It is easy to make and incredibly delicious.
If you have loads of green beans at home, this recipe is an excellent way to include them in mealtimes. Not only is green beans and mashed potato really tasty, but it is filling as well and packed with goodness.
Did you know that green beans are high in vitamin K? They also contain a good amount of calcium. Both vitamin K and calcium are vital for strong and healthy bones. So including this green veggie in your diet is very important for bone growth, especially in young children.
Preparing this side dish will not even take you up to an hour. Simply sauté the onions, garlic and green beans as per this recipe instruction in a bit of oil. Cook the potatoes separately. Mash the potatoes and add the beans and mash everything together.
If you have never tasted green beans and mashed potato, you are in for a real treat!
Green beans with mashed potato recipe
Course: SidesCuisine: South AfricanDifficulty: Easy
500 g green beans, topped and tailed and cut diagonally into 2.5 cm pieces
1 medium onion, chopped
1 large clove garlic, crushed
2 tablespoons olive oil
2 large floury potatoes
20 g butter
salt and black pepper to taste
Heat the oil in a large frying pan, add the onion and sauté until softening, then add the garlic and cook for another minute or so.Add the beans, stir well to mix with the onions and continue to sauté on medium heat. When the vegetable starts to stick, add a little water (just enough to cover the base of the pan), turn down the heat and allow to simmer until the water has evaporated and the beans are cooked.In the meantime, boil or steam the potatoes until they can be pierced easily with a sharp knife (about 20 minutes).Peel the cooked potatoes and in a large bowl, mash them together with the butter. Add milk until the desired creamy consistency is reached.When the beans are done, add the beans to the potato and mix well. Use a potato masher to crush the beans into the potato a bit.Check for seasoning and add salt and lots of freshly ground black pepper to taste. Serve as a side dish with stews or roasts.
