Creamy brown rice: Enjoy this side dish like never before
If you have never had creamy brown rice you are in for a real treat with this side dish recipe. We all enjoy rice as a filler or base for many stews. Usually, rice is simply cooked in salted water. However, this recipe brings some extra flavours to this side dish we have all grown up with.
First, cook your creamy brown rice in two cups of chicken broth. This will infuse so much flavour into the rice. Then add some cream and mozzarella cheese, season with salt and pepper and your rice will transform into a rich creamy side of which you will not be able to get enough.

Ingredients
2 tablespoons butter
1 cup long-grain brown rice, rinsed
2 cups chicken broth, hot
½ cup mozzarella cheese
½ cup cream
1 teaspoon salt and pepper
Method
Melt the butter in a frying pan over medium heat.
Add the rice and fry for 2-3 minutes until most, or all of the butter, has been absorbed.
Pour in the hot chicken broth, then bring to a simmer, cover, and lower the heat to low.
Simmer for 20 minutes or until all or most of the liquid is gone and the rice is cooked through.
Add the mozzarella cheese and mix well.
Add the cream and salt and pepper. Allow simmering for 2 minutes.
Remove from the heat and let it rest for 5 minutes, then serve.
