Chorizo salad: Spicy salad perfect for a South African summer’s day

When a heatwave is engulfing South Africa, light meals are usually best. This chorizo salad is perfect for our hot summer weather and will satisfy the hunger pangs without making you feel sluggish or heavy.

The combination of salad ingredients with chorizo is a taste sensation. Adding chorizo to the mix gives a little meatiness to the salad and makes it more filling. This is why a chorizo salad works very well for a light lunch.

Preparation time is so quick that you will still be looking for something to do, and then the salad is ready to be served. Cooking time is about 5 minutes to fry the chorizo and then tossing the salad ingredients together takes another 5 minutes. So within 10 minutes, you will be able to dig into your delicious and flavour-packed salad.

Ingredients

1 packet salad leaves

1 sliced cucumber

100 g chorizo

50 g feta cheese

½ onion, sliced

1 1 sliced red, green, yellow peppers

1 punnet cocktail tomatoes

100 ml mayo vinaigrette

Method

Fry the chorizo and set it aside.
Wash the salad leaves and place them in a salad bowl.
Add peppers, onion, cucumber, feta cheese, and chorizo.
Drizzle with mayo vinaigrette.
