Chicken nuggets – Easy crispy, savoury bites

The simplest recipes are oftentimes the tastiest. This is true of this chicken nuggets recipe. With a few simple ingredients you most likely already have in your pantry, you can quickly prepare this easy midweek meal. This chicken nugget recipe will be loved by young and old. You can prepare it as dinner or for a savoury snack platter.  Either way, these little golden bites will disappear faster than you can imagine.

If you like to do your food preparation ahead of time, this recipe is perfect for you. After preparing the chicken nuggets, freeze them and pull them out to fry when you want to serve them as a light meal. Fry these tasty gems once and you will never be able to go back to the fast-food alternative. These nuggets made form scratch at home with this recipe is so much tastier.

Serve the nuggets with a deliciously sticky honey mustard sauce or any other sauce your family loves.

2 large eggs

1 cup milk

2 cups chicken breasts cut into one-inch chunks (one breast cut into half makes about 15/16 nuggets)

¾ cup flour

¾ cup breadcrumbs (or Southern-style coating)

2 tablespoons sugar

2 teaspoons salt

1 teaspoon chicken spice

1 teaspoon chilli powder or paprika

6-8cm oil to fry


Use a rolling pin to make the breadcrumbs fine. Alternatively, you can use a food processor. If you are using Southern Fry coating you can skip this step.
In a bowl beat the eggs with the milk and place the chicken chunks in the bowl. Place this mixture in the fridge for 5-10 minutes.
Mix the flour, breadcrumbs, spices, sugar and salt together, remove the mixture from the fridge and cover the nuggets with the flour mixture. Place it on a tray and in the fridge for 5 minutes.
While the mixture is in the fridge heat the oil on the stove. It needs to be hot enough so when one piece is dropped in it bubbles but doesn’t burn! Fry it in batches so that they all don’t stick together. Fry the nuggets for about 6-8 minutes. This really depends on the pan you are using and the heat of the stove, you want the chicken pieces to be golden brown. Don’t fry for too long or the chicken will dry out.
Have another tray out with a paper towel placed on it to drain the oil from the nuggets.
Serve just as is or with chips, veggies and sauce of your choice.
