Another country-wide cold snap is upon us and all we are longing for is some soul-warming food. The cooler weather definitely offers the perfect opportunity to indulge in a hearty bowl of homemade soup or chicken broth.

The most wonderful thing about this easy, convenient meal is the health benefits that come with it. Combining so many essential food groups, soups are rich in the vitamins, minerals and other nutrients that your body needs to keep you going, especially in the colder months.

Chicken broth recipe
Course: Starter, MainCuisine: GlobalDifficulty: Easy
2 kg chicken necks/feet/wings
3 carrots, chopped
3 celery stalks, chopped
2 medium onions, peel on, sliced in half lengthwise and quartered
4 cloves garlic, peel on and smashed
1 teaspoon Himalayan salt
1 teaspoon whole peppercorns
3 tablespoons apple cider vinegar
2 bay leaves
3 sprigs fresh thyme
5-6 sprigs parsley
1 teaspoon oregano
18–20 cups cold water
8 tablespoons of The Harvest Table Bone Broth (optional)
Place all ingredients in a 10-quart capacity slow cooker.Add in water.Simmer for 24 – 48 hours, skimming fat occasionally.Remove from the heat and allow to cool slightly.Discard solids and strain remainder in a bowl through a colander.Let the stock cool to room temperature, cover and chill.Use within a week or freeze up to three months.
