Butter chicken – A delicate blend of rich curry spices

Butter chicken recipe

Ingredients
1 kg cubed chicken breast fillets
50 g garlic paste
20 g ginger paste
100 g butter
30 g paprika
20 g cumin powder
200 ml fresh cream
30 g garam masala
100 ml natural yoghurt
50 ml pureed tomato
100 g onion paste
40 g mixed masala
20 g dhania powder
50 g chopped masala
Method
Melt the butter and add the onion, ginger, garlic, paprika, cumin powder, garam masala, dhania powder and the mixed masala. Cook until fragrant.Add the chicken and yoghurt and cook for a further 4 minutes.Add the tomato puree and cook for 8 minutes.Add cream and reduce to a sauce consistency.Season with salt and add clarified butter to finish the dish.
