Ingredients
3 medium avocados
⅓ cup xylitol
1 cup low-fat yoghurt
½ cup whipping cream
½ teaspoon vanilla extract
20 g almond flakes
¼ teaspoon lemon juice
Method
Add all the ingredients into a blender.
Place in a home ice cream machine, and then allow it to churn for 20 minutes. Remove and either serve immediately or freeze and serve later.
Make eight 1 cup servings and sprinkle the almond flakes on top with some mint as decoration.
